Coming up with different and interesting low carb recipes can be challenging.  Sometimes you need a change of pace.  Sometimes you need the comfort of a casserole.

Simple and Easy

If you're a busy mom or just someone who is simply interested in quick and easy low carb meals, then you should definitely give this casserole a try.  Simple ingredients and simple directions sounds great doesn't it!  Simplicity is KING.

Italian chicken and cauliflower rice casserole

This low carb Italian Chicken and Cauliflower Rice Casserole is flavorful and ready in under 30 minutes. Use pre-riced cauliflower for a superb time saving step. 

I've recently discovered that steak seasoning is amazing on chicken!  Particularly, the Montreal flavor steak seasoning is the one I've been using.  It really opens up a sort of flavor burst.  Sprinkle a little on the cauliflower rice, too!

A one-dish meal with easy cleanup is appealing to just about everyone every now and again.  Our kids are grown but that doesn't mean we want to spend a lot of time in the kitchen after working all day, right!

Italian chicken and cauliflower rice casserole plated

Yields4 Servings

 4 Chicken Breasts
 1 14.5 oz can Stewed Tomatoes with juice (Italian)
 1 10-12 oz Cauliflower Rice, frozen
 Steak seasoning, to taste

Preheat oven to 350F. Pour the frozen cauliflower rice in the bottom of a casserole dish. I use an 8 x 11.5 dish.

Sprinkle desired amount of steak seasoning on the chicken breasts. Lay the chicken breasts on top of the cauliflower rice. Pour the can of stewed tomatoes evenly over the chicken breasts. Cover with foil and bake for 25 minutes or until chicken reaches an internal temperature of 165F.

NOTE:  To further decrease the net carbs, use the canned PLAIN diced tomatoes instead of the stewed tomatoes.  Most brands of plain diced tomatoes have HALF the net carbs than the stewed tomatoes.  Be sure to add plenty of Italian seasonings such as basil, garlic, and oregano.  And as always, check the nutrition label for comparison purposes.
