Ultimate Creamy Jalapeno Chicken in white bowl

Are you seeking a chicken dinner recipe that’s quick and easy? I got you covered!  You probably know by now that I love quick and easy recipes!  And this one is no exception. 

This ultimate, quick and easy jalapeno chicken casserole recipe has a little something extra (surprise, I threw in a veggie!). Chicken breast, sliced jalapeno peppers, sour cream, cream of chicken soup, spinach, and monterey jack cheese come together for a spicy, creamy, easy, chicken dinner tonight.

Beautiful or Delicious?

Well, you're gonna have to choose.  I will be the very first one to admit this isn't a "pretty" recipe.  The picture that I took did not do it any justice whatsoever!  In the south, we have 2 words for this:  Bless it

Seriously though, I was going for that "at home, on the stove" kinda picture and that's exactly what it is.  The lighting is, well, not that great but it's what my kitchen looks like.  Shadows and all.  This is what I call an "organic" photograph, wink wink, but it's for real.  However, don't let these photos discourage you from trying this awesome recipe!  Beauty is in the eye of the beholder (or tastebuds in this case).

Just close your eyes and imagine:  hot, spicy, jalapenos and chicken combined in a cheesy, creamy sauce topped with more cheese.  Who cares what it looks like, right!

It's so good you can eat it all by itself.  But if you prefer, you can serve it on top of rice, cauliflower rice, spaghetti noodles, penne pasta, etc.  The choices are endless so whatever floats your boat, go for it! 

Oooh, the light bulb just went off in my brain.  Try this:  top this casserole with some buttered, crumbled ritz crackers before baking.  If you do this, please let me know how it turned out! 

One More Thing

One more thing you should know about this recipe.  IF you have any leftovers, they will be spicier the next day.  Apparently, jalapenos get hotter with time (like my hubs).  And that's not necessarily a bad thing, in my opinion!  Just a friendly heads up because some people don't like surprises (unless it's jewelry or money).

Yields1 Serving

 1 lb Cooked chicken breast, chopped or shredded
 1 Onion, chopped
 3 Jalapeno peppers, fresh, sliced (or more if you prefer)
 4 Green onions, sliced (save a few for garnish)
 2 Cans of Cream of chicken soup
 1 cup Sour Cream
 2 cups Monterrey jack cheese, shredded
 9 oz Spinach, fresh or frozen, chopped, cooked & drained
 2 tbsp Butter
 Salt & pepper to taste

In a large pan, saute the onion and jalapeno in olive oil until tender. Remove from heat.
Add the cream of chicken soups, sour cream, chicken, green onions (save some for garnish), salt, pepper, and half the cheese. Mix well.

Pour all the ingredients into a casserole dish and top with remaining cheese. Bake at 350F, uncovered, for about 20-30 minutes, or until the cheese is melted and slightly browned around the edge. Add remaining green onion for garnish, if desired.

Enjoy as is or serve over cooked pasta, rice, or cauliflower rice.
This is will spicier the next day; and that's a good thing!
